Job Description

A chef de partie is responsible for running a specific section of the kitchen such as fish, grill, saute or vegetable. In a large kitchen, this type of chef usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly.

Responsibilities

You love food and have a huge knowledge of ingredients and flavours. You are hungry to share the knowledge and develop the budding chefs around you.

You have a sound awareness of the brand and the direction the business is headed. You know which ideas best suit our customer base.

Commercially savvy, you have good knowledge of pricing dishes and chasing the best prices
You are adaptable to new menus and new ideas. Head chefs will always be experimenting and plotting new creations, and they will need your help to execute every menu with each new season.

There is room for your input if you have a passion to contribute and learn.
In smaller kitchens, a chef de partie may work independently as the only person in their section.
Also known as a station or section chef, the chef de partie reports to the senior chef and has a very important role in any kitchen.

Future Prospects

  • Progression from this apprenticeship is expected to be into a senior culinary chef role

Reality Check

  • £21k - £25k PLUS £1,500 incentive payment on completion of apprenticeship
  • 40 hours for individuals aged 16-17
  • 45-48 hours for individuals aged 18+

Qualities Required

Commercially savvy, you have good knowledge of pricing dishes and chasing the best prices.
A disciplined clean freak. Your kitchen is inspection ready at the drop of a hat.
You are a hardy soul who enjoys physical work in a hot and fast environment. You enjoy a task-based environment, you motor through prep lists with uncanny efficiency. Customers get their food on time, every time!
