Job Description

The Leaping Hare Restaurant, owned by Wyken Farm Partnership, is an award winning restaurant based on a farm specialising in local, fresh and seasonal cooking. They have an exciting opportunity for an apprentice commis chef to join the team.

Responsibilities

The role of an apprentice chef, working alongside a full-time team of four other chefs, is to deliver freshly prepared meals to a high standard. The apprentice will be expected to be passionate about food and fresh ingredients. There will be exposure to all areas of the kitchen, and to the wider farm where much of our food is grown.

Daily duties include:

  • Preparing fresh fruit and vegetables for service
  • Butchering and preparing meat and fish for service
  • Helping with production of pastries and desserts
  • Assisting across all stations during services: from cold starters to working on the stove with main courses
  • Contributing to all elements of H&S: daily clean downs, recording fridge temperatures and recording production dates

Future Prospects

There may be the opportunity for a full-time role following the completion of the apprenticeship, depending on whether the team has any vacancies. However, many junior chefs from our restaurant have gone on to work in some of the most prestigious restaurants around the country, with Michelin 1-3 stars.

Reality Check

You will be expected to embrace an ethos of sustainable and seasonal sourcing, as well as work to an exceptionally high standard. You will work 40hrs per week if aged 16-18, over 18s may work up to 48hrs per week. On Friday and Saturday shifts there is a break and communal meal in between service.

Skills Required

  • Good knife skills are preferred
  • Understanding of basic Health and Safety and Food Hygiene
  • Strong organisational skills

  • A high interest in food and fresh ingredients

Qualifications Required

  • GCSE Grade 4 (C) or above in maths and English or equivalent is desired
  • Professional Cookery Level 1 NVQ, or similar, is required

Training Provided

Level 2 Commis Chef Apprenticeship.
